Easy and Delicious Enchiladas

This is one of Chrystal’s, near weekly, go-to dinner recipes.  Her kids love it and it’s easy to throw together on a busy night!  Enjoy!!



12 tortillas shells

1 large can of your favorite enchilada sauce (I use Old El Paso – Red – Mild)

4 oz cream cheese

2 cups cheddar cheese

1 packet of taco seasoning

Your meat choice – I love using venison or turkey


  1. Preheat oven to 350
  2. Cook your meat of choice adding the taco seasoning (or make your own using cumin, chili powder, salt, pepper, garlic powder, onions)
  3. In a 9×13 glass pan spread enchilada sauce – just enough to cover the bottom of the pan
  4. To prepare tortilla – spread on cream cheese (a tsp or less for each shell), sprinkle on some cheddar cheese, drizzle on some enchilada sauce, layer with cooked meat (tablespoon or so), roll up tortilla, place tortilla in the pan with seam facing down…repeat until all tortillas are used
  5. Pour the rest of the enchilada sauce over the tortilla shells and layer with the rest of the cheddar cheese
  6. Cook for 25 to 30 mins
  7. Top with sour cream, lettuce, scallions and a side of guacamole (if desired)

For an even crunchier shell – broil for the last 5 mins
